Coconut Iced Coffee

Since I learnt how to make good iced coffee at home, it’s become my latest obsession. And as we’re currently experiencing a heatwave here in England, it provides a refreshing way to still get your caffeine fix. I’ve been experimenting with so many different flavours – caramel, cookie dough and even chocolate but this coconut one is the perfect summer option. It only takes a couple of seconds to whizz everything together in the blender plus it’s low in sugar and a whole lot cheaper that the extortionate prices charged at the coffee shop – and if I’m being completely honest, it tastes even better too!

Ingredients (serves 1)

  • 1 mug of chilled water
  • splash of cashew milk, or milk of choice
  • 2-3 tsp coconut infused coffee (I like little’s or beanies)
  • handful of ice cubes

  1. Add all of the ingredients to a blender and blend until smooth and creamy.
  2. Pour over extra ice cubes and enjoy!
