Vanilla Chai Breakfast Bowl: Two Ways

If you’re not incorporating ginger, cinnamon, cardamom and nutmeg in to your life in as many ways as possible at this time of year then what are you doing?

If you hadn’t already noticed, I’m using Christmas as the perfect opportunity to add an array of festive spices to pretty much every meal possible and these vanilla chai breakfast bowls are so addictive that I can’t stop alternating between the two. First up there’s vanilla chai oats – warming, thick and creamy, these protein packed oats are the perfect comforting breakfast bowl on these chilly winter mornings. Each bite is so deliciously creamy and bursting with flavour from the blend of fiery spices, which is delicately balanced by the mashed banana and vanilla. I love to top mine with banana slices, warm fruit compote and a big dollop of chai nut butter for the ultimate winter breakfast.

But if porridge isn’t your thing in the morning, this creamy protein packed nice cream alternative will ensure that you get a chai fix that’s equally delicious. I have to admit that it might be a little too cold for nice cream but if like me, you are brave enough to face it on these chilly mornings, (even if that does mean resorting to eating it tucked underneath the duvet) then you’re not going to be disappointed. When it comes to this flavour combo, it’s definitely worth freezing for – chunks of frozen banana provide a creamy texture which makes this breakfast bowl feel so indulgent and the sweet vanilla protein powder blends so well with the kick from the spices. It makes the perfect base for my gingerbread granola, fresh fruit and nut butter.

Whether you opt for a cosy vanilla chai oat bowl or creamy refreshing nice cream, either of these bowls is sure to get your day off to a festive start and would be a great option for breakfast on Christmas day.

Vanilla Chai Oats

Ingredients

serves 1

  • 1/2 cup sprouted porridge oats
  • 1 and 1/2 cups unsweetened almond milk
  • 1/2 large banana, mashed (reserve the rest for topping)
  • 1 scoop MissFits Vanilla Protein Powder (or vanilla protein of choice)
  • 1/2 and 1/8 tsp ground cinnamon
  • 1/4 and 1/8 tsp ground ginger
  • 1/8 tsp nutmeg
  • optional: convert to zoats by adding 1/2 large grated courgette
for topping

Method

  1. Add the oats and 1 cup of the plant milk to the pan and place over a medium heat.
  2. Warm through for 2-3 minutes until the milk starts to bubble. Add the remaining milk to the pan along with the mashed banana, cardamom, cinnamon, ginger, nutmeg and grated courgette (if using) and stir well.
  3. Reduce the heat to low and leave to cook through until thick and creamy for a further 8-10 minutes, stirring occasionally to prevent everything from sticking to the bottom of the pan.
  4. When the oats are almost done, add in the scoop of protein powder and stir well until fully combined, adding a little more liquid if necessary.
  5. Transfer to your favourite bowl and add the banana slices along with the nut butter and berry compote. Enjoy!

Vanilla Chai Nice Cream

Ingredients

  • 1 large frozen banana
  • 1 cup frozen courgette
  • 1/2 cup unsweetened almond milk
  • 1 scoop MissFits Vanilla Protein Powder (or vanilla protein of choice)
  • 1/2 and 1/8 tsp ground cinnamon
  • 1/4 and 1/8 tsp ground ginger
  • 1/8 tsp nutmeg
for topping

Method

  1. Add all of the ingredients to a high speed blender or food processor and blend until smooth and creamy.
  2. Transfer to your favourite bowl and top with the granola, nut butter and fruit. Enjoy!
