January doesn’t just mark the start of a new year but the start of Veganuary – a month-long challenge which takes place annually, challenging people to make the pledge to sign up to eating vegan for a month, in the hope that they’ll be able to continue for the rest of the year and a lifetime beyond that. It wasn’t something that I was aware of when I made the switch to a plant based diet, but it’s something that I wish I’d been able to take part it and as I’ve been vegan myself for nearly three years, I wanted to do something to celebrate.

Each day throughout the month, there will be a new blog post – whether it’s a recipe, review or advice. I want to show people that eating a plant based diet can be delicious, easy and affordable. I’m not here to preach about veganism – If you want to serve one of my salads with chicken or add meat to one of my stews or curries then that’s fine too. Even if you included one more plant based meal a week, then it’s a step in the right direction.
